Alright, I hope you are ready to meet your newest favorite sweet treat — Monster Cookie No Bake Bars our take on your favorite cookies, the classic monster cookie.
They are super simple to make with mini m&m, brown sugar, chocolate chips, heavy cream, and more!
They are perfect with you need a quick fix for that sweet tooth you have and are made with no white sugar, without baking, these are simpler to the bake monster cookies version and in bar form and are a definite crowd pleaser recipe.
You might even be able to claim these are monster cookie energy bites, except they are in fact no bake monster cookie bars that are set in parchment paper and ready in no time when you need an easy treat to serve your cookie monsters.

Ingredients used to make Monster Cookie No Bake Bars:
Cookie
• ½ cup salted butter, softened to room temperature (could replace with coconut oil)
• 1/2 cup honey
• ¼ cup brown sugar
• 3/4 cup creamy peanut butter (natural peanut butter works too)
• ½ cup all-purpose flour, microwaved for 1 minute, stirring halfway through to kill bacteria
• 1 ½ teaspoons vanilla extract
• 1 3/4 cups rolled oats (you can also use quick oats or old-fashioned oats as well)
• 1 cup M&M’s candies
Chocolate Drizzle
• ½ cup milk chocolate chips
• ½ cup heavy cream
How to make Monster Cookie No Bake Bars:
- Cookie dough mixture– In the bowl of a standup mixer or large bowl with an electric mixer, beat the butter, honey, sugar, peanut butter, all-purpose flour, and vanilla on high speed for 30 seconds. Add the rolled oats and mix until combined.
- Add the M&M’s candies and mix until combined.
- Chocolate drizzle– Put the milk chocolate chips and heavy cream in a microwave safe bowl. Microwave on high for 30 seconds. Stir.
- Microwave on high for another 30 seconds. Stir. Repeat until the chocolate is melted and smooth.
- Assemble– Press the dough into a 9-inch round prepared pan lined with parchment paper.
- Drizzle the chocolate drizzle over the dough.
- Chill– Place the confection in the refrigerator for 1-2 hours or until the chocolate drizzle has solidified.
Why do you need to microwave the flour?
When you are working with flour, generally it is heated up whether it is in the oven or on the stovetop which kills the bacteria in raw flour. However, with this no bake bar cookies you will not be heating up the flour in the slightest.
Before you mix the dry ingredients into the creamy mixture, you need to microwave the flour by itself in order to kill any of the bacteria that might be in the flour. Once you do that, you are ready to go!
How to store these chewy monster cookie bars
Once you have all of the simple ingredients mixed together and formed into the chewy bars, either cover them with plastic wrap or cut the bars and store it in an airtight container for 4 days at room temperature. Or up to 2 weeks in the fridge.

Monster Cookie No Bake Bars Recipe
Ingredients
- ½ cup salted butter
- ½ cup honey
- ¼ cup brown sugar
- ¾ cup creamy peanut butter
- ½ cup all-purpose flour, microwaved for 1 minute, stirring halfway through to kill bacteria
- 1½ teaspoons vanilla
- 1¾ cup rolled oats
- 1 cup M&Ms candies

- Baking Dish (9 Inch Square), or 9" Round Cake Pan
Instructions

- Press the dough into a 9×9 Square pan or 9-inch round cake pan lined with parchment paper. Drizzle the chocolate drizzle over the dough.
- Place the confection in the refrigerator for 1-2 hours or until the chocolate drizzle has solidified.
