My kids could eat PB&J sandwiches for lunch every single day. I, however, can’t muscle down one more of those sandwiches! I whipped up some of these Mushroom Swiss Melts for my husband and I for lunch a few days ago and they were a hit!
Mushroom Swiss Melts Recipe
I whipped up some of these Mushroom Swiss Melts for my husband and I for lunch a few days ago and they were a hit!
Serving
Ingredients
- 1 Tablespoon olive oil
- 1 onion, diced
- 2 cups sliced mushrooms
- 8 Tablespoons thousand island dressing
- 8 slices rye bread
- 4 slices Swiss cheese
Instructions
- Add olive oil to a large saucepan over medium-high heat, and cook onion and mushrooms until soft; set aside.
- Heat a griddle or pan over medium heat and spray with nonstick cooking spray.
- Spread one Tablespoon of thousand island dressing on each piece of bread.
- Top with cooked onions and mushrooms and a slice of swiss cheese.
- Place 4 remaining pieces of bread on top to create sandwiches.
- Place on griddle and cook for a few minutes on each side, until bread is toasted and cheese is melted.
- Serve warm with additional thousand island dressing, if desired.
