This One-Pan Egg and Turkey Skillet is only 4 simple ingredients, and can be made in under 30 minutes. It’s packed full of protein, and with salsa, ground, turkey, and eggs, it’s a pretty healthy breakfast, too. We like to use this recipe as a great base, and then customize it to our liking.
I love topping it with avocado, a sprinkle of cheese, and a dash of hot sauce. Other reads have added taco seasoning or Mexican blend cheese to give it a different flavor profile, or serving it with some tortilla chips to make it super kid-friendly. Whether you have it for breakfast, dinner, or brinner, it makes a fantastic quick and easy meal.
Reader Review: “Have literally been making this every two weeks for breakfast for my husband. He pairs it with yogurt and absolutely loves it! I pop it in the even for about 10 min just to give the eggs a good mix. I use spicy salsa and it takes it over the top. One of our favorites and healthy!” – Alicia
Why You’ll Love This Recipe
- High Protein (~36g per serving)
- Great for busy mornings or evenings
- One pan for easy cleanup
- Low carb
Ingredient Notes for Egg and Turkey Skillet:
- Ground turkey: we like to use ground turkey (1 pound) to keep the fat content to a minimum with this recipe. It’s also much more cost effective. You can use any kind ground meat, however, just make sure it’s cooked all the way through and you drain the grease.
- Salsa: we love just a simple store-brand mild, chunky salsa, but you can swap this out for whatever salsa is your favorite. You’ll need one cup. Make your own with this easy blender salsa recipe, or swap it out for a salsa verde for a different flavor.
- Eggs: we use large AA eggs, and half a dozen will fit easily in a large saucepan without overcrowding it. Depending on how you like your yolk, you can cook it for more or less time to reach your desired consistency.
- Seasoning: in a pinch, we just use salt and pepper. You can add in any seasonings you like. Readers have suggested garlic powder or garlic salt, cumin, or chili flakes for extra heat.
Variations and Substitutions
Readers love this recipe for its simplicity and how easy it is to customize. Here are a few different variations and substitutions that we love:
- Add more veggies. Readers have recommended adding peppers and onions while cooking the ground meat. You can also top it with chopped tomatoes, jalapenos, or diced green chiles.
- Switch up the flavor. One reader, Tapple, suggested using Mango Habanero Sausage and Pineapple Salsa, then topping it with Mexican cheese blend – yum!
- Use it as filling. You can take this easy filling and roll it up in a tortilla for quick and easy breakfast burritos.
- Stretch it a little further. Turn it into a full meal or make it stretch a little further by serving this over rice with a little lettuce and sour cream.

How to make this easy one pan skillet
- In a nonstick skillet, add ground turkey. Cook over medium heat until it’s browned. If you want to add extra veggies, this is where you should add them in, while the meat is browning. Drain grease.
- Add in the salsa and mix well. Cook for 2-3 minutes until heated through.
- Crack in eggs and cover the skillet for 7-9 minutes. Cooking for 7 minutes will give you runnier yolks and around 9 minutes will give you a fully cooked yolk.
- Serve topped with any additional toppings (see variations and substitutions notes)

Storing and other tips
Let any leftovers cool, then transfer them to an airtight container and refrigerate for up to 3 days.
To reheat, you can pop it in the microwave for 30-second intervals until it’s warmed through. Please note that reheated eggs may change in texture to be slightly more rubbery.
FAQs for Egg and Turkey Skillet
We would not recommend freezing this as is, because it can affect the texture of the eggs. Instead, we’d recommend scrambling the eggs before freezing so the texture is better.
Yes, you can absolutely swap out the ground turkey for ground beef or other ground meat. Just make sure the meat is cooked through and you drain the grease.
We love a mild, chunky salsa. Our favorite is actually the store-brand from Kroger, but any will work.
When your egg is cooked, the white part will be opaque and set. Cook your yolk for about 7 minutes for a slightly runny center. If you like your yolk cooked all the way through, aim for 9 minutes, until the center is firm, but not dry.
What to serve with this recipe
If you’re serving this for breakfast, you can serve it with a side of fresh grapefruit, chia seed pudding, or breakfast potatoes.
For a full dinner, serve this over cilantro lime rice, with tortilla chips, or wrapped in a tortilla. You could add a side of Air Fryer Roasted Potatoes, too.

One Pan Egg and Turkey Skillet Recipe
Ingredients
- 1 pound ground turkey
- 1 cup salsa
- 6 eggs
- salt and pepper, to taste
Instructions
- Spray skillet with non stick spray and add in ground turkey.
- Cook over medium heat until turkey is browned. Drain any grease.
- Add in salsa and mix well. Cook turkey and salsa for 2-3 minutes.
- Crack in eggs and cover skillet for 7 to 9 minutes or until eggs are cooked to your liking. I cooked mine for the whole 9 minutes because I liked my yolks cooked all the way through.
Notes
- You can swap out the ground turkey for ground beef. With higher fat content, make sure you rinse and drain it.
- Eggs are done when the egg white is opaque and firm (not translucent or slimy) and the yolk starts to thicken slightly.
- Keep the lid on while cooking so you don’t have to flip the eggs. The steam from keeping the lid on will cook them from the top and the bottom, which will finish the recipe quicker.

Eating this right now. So glad to find a healthy breakfast that tastes really good!
Thanks!
This will make a healthy dinner for my hubby and I this week.
Wow! My mouth is watering right now and will make in a few minutes! This is a great breakfast, lunch or dinner recipe! I have been gathering ideas for company we have coming and this will be one of the breakfasts! Thank You!!!!??
What sides could you add to this?
We love fresh fruit or grapefruit for breakfast!
This was DELISH. We made for dinner tonight. I have a picky 5 yo dtr who eyeballs and vetoes most food groups, but does eat most things Mexican I seasoned the meat with onion powder, garlic powder, sun dried tomato bits, and lawrys chicken (and turkey) seasoning while I browned the meat and added a can of diced tomatoes (juice drained off) reduced the salsa ( for the picky eater) and added shredded cheese the last 2 1/2 minutes. We served dinner with corn tortillas, sour cream, avocados sliced and limes… Can’t thank you enough .. A healthy dinner and something we will definitely make again…
Almost forgot cut up oranges to go on the side 🙂
Yay!! It’s so nice when you can get those picky eaters to eat!! Thanks so much for stopping by our blog.
I used a tomatotillo? salsa-sauce, and it was very tasty. Not very hot-spicy. Had it for dinner and cooked peas to go with it, was great. Will be doing it again, with variations.
Made this last night for supper and it was a hit! I added some peppers and onions before cooking the turkey and added a little shredded cheese on top at the end. It was delicious! We usually do a weekly “breakfast for supper” day at our house and this recipe is definitely going to make the menu again! Thanks!
Can this be reheated?
We reheat any leftovers in the microwave the next day.
Did you add the pepper and onion along with the salsa?
I made this as a dinner meal. I would add another cup of salsa and serve it over rice to give it more dinnertime substance. The flavor is good, and really, it couldn’t be any easier.
Service with a salad and pickled beets. Simple and inexpensive
We served it with tortilla chips….. 2 of my 3 kids are super picky, but will eat most things if I serve tortilla chips with it!
My turn to make dinner. Found this recipe and gave it a shot. My wife loved it, and had me save it to make again! Thanks for making me look like a hero!
Super basic but the template is lovely!
I used Mango Habanero Sausage and pineapple salsa. Topped with mexican cheese blend.
I love this recipe, I ended up mixing everything and baking it at the end for the extra crunch.
Wow! Now that I think about it, my mouth is watering and I can’t wait to prepare it! This dish works as well for lunch or supper. This is one of the breakfasts I’ve been planning for the guests we’ll soon be hosting. All of this is really appreciated.
this was amazing! high protein, healthy, & delicious. i will say though that its more like 2 big servings or 3 small servings depending on your appetite. this is definitely in my meal rotation now
i bought ground turkey on a whim and found this recipe after googling – what a simple yet genius idea! i had leftover spicy salsa in the fridge, and no chips, so this was perfect for me and perfect tasting. thanks!
This was so good, I added a package of taco seasoning with a 1/2 cup of shredded cheese and added some lettuce and sour cream. It’s Delicious 10/10
This is our new go to for a healthy breakfast. I pop it in the oven for about 10 minutes after following the recipe. My husband asks for this weekly now. He combines it with yogurt.
Have literally been making this every two weeks for breakfast for my husband. He pairs it with yogurt and absolutely loves it! I pop it in the even for about 10 min just to give the eggs a good mix. I use spicy salsa and it takes it over the top. One of our favorites and healthy!
This was delicious and SO easy! I often have leftover ground meat and this is such a great way to make it into another hearty meal. We’ve been doing this for breakfast but it would also be a yummy dinner! We add avocados and sour cream and flour tortillas 🙂
Cooked this for my mom, my wife and I for dinner and we all 3 loved its going into the “keeper” file! Thanks for sharing.
Can your meals be frozen.
We haven’t tried freezing this one before. It might affect the texture of the eggs. If you give it a try let us know how it turns out!
