These easy sandwiches are my go-to when I need a quick lunch or dinner. I feel good about feeding it to my family because it’s loaded with protein and it’s items that I usually have on hand.

make it into a wrap:
One of my favorite things, is wraps. I love whole wheat tortillas, and this recipe would taste amazing on a tortilla, served as a wrap. It’s also great for meal prep, because tortillas don’t get as soggy as bread, usually.
This would be a great meal prep recipe, but we recommend going to a place where nobody is around. Mostly because any egg salad sandwich isn’t going to give off the best smell if you know what I mean.
what toppings would be good on this sandwich?
I am a huge topping person. Especially if I can sneak vegetables into my diet, without eating them plain, I am one happy girl. Here are a few of my favorite additions:
-Lettuce
-Spinach
-Sprouts
-Cucumber Slices (sliced very thin)
-Carrot Shreds
-Celery (sliced very thin)
-Olive Slices
-Sweet Pickle Relish
-Avocado

OPEN-FACED TUNA MELTS RECIPE
Ingredients
- ¾ cup light mayonnaise
- ½ green bell pepper, diced
- 2 Tablespoons onion, diced
- 1 stalk celery, diced
- 1 Tablespoon yellow mustard
- ½ teaspoon Worcestershire sauce
- 3 cans tuna, drained
- 6 slices bread, toasted
- 3 tomatoes, sliced
- 6 Tablespoons shredded cheddar cheese
Instructions
- Heat oven to broil.
- In a small bowl combine the mayonnaise, green pepper, onion, celery, mustard, and Worcestershire sauce.
- Then stir in tuna.
- Spread over each piece of bread; top with a tomato slices. Sprinkle with cheese.
- Place bread on a baking sheet. Broil 3-4 inches from the heat for 2 minutes or until lightly browned and cheese is melted.
