If you are looking for a new vegetable dish to try, these Parmesan Peas will be your favorite!
I have found that cheese on vegetables, always makes everything better and this recipe is no exception.
Serve this easy side dish with one of our easy chicken dishes (like Baked Italian Chicken) and dinner is done.
How to make Parmesan Peas:
Step 1: Heat the oil over medium heat in a large skillet. We recommend olive oil, but you could use any oil.
Step 2: Add the diced onion and cook until translucent (3-4 minutes).
Step 3: Add in the peas and salt and cook for 2-3 minutes or until peas are barely soft. Add in the lemon juice and stir. I used fresh lemon juice, but you could also use the lemon juice that comes in the plastic lemons.
Step 4: Remove skillet from heat, top with Parmesan cheese and black pepper, and serve.
could I use this recipe with other vegetables?
You could most definitely use this recipe with other vegetables. We have tried it with broccoli, zucchini, squash, carrots, green beans, cauliflower, and Brussel sprouts.
My personal favorite vegetable to make with this recipe, is red potatoes. Be sure to slice them into small or thin chunks. I like baking my red potatoes, then adding this mixture to it.
You could do this recipe with any fresh or frozen vegetable. Sometimes to spice up a bag of microwave steerable vegetables, I will microwave them, then add this recipe to them.
It adds a little flavor to it and my kids will eat it if it has a little cheese on it.
what would I serve as a main dish?
These Parmesan Peas are so versatile, you could serve them with many things. I personally love serving them with a main dish that has a little sauce to it. I am one of those people that mixes their peas into their food.
