We’ve been trying to eat a little better around our house the last few weeks. I have never been much of a healthy eater.
My mom always called me “the fast food queen” growing up, so these have been some major changes for me.
My family, including myself, loved this recipe and I felt much better eating this rather than the hamburger my body has been craving so much.
My darling husband even cut and stuffed the pitas so he could eat them sooner. They were that good.
I dare say, these may even taste better than a juicy burger. They are just so light and delicious. Also full of flavor. You are going to love how easy these are.
what could I replace the pita with?
If you don’t have any pita bread pockets, they can easily be replaced. Here are a few of our favorite alternatives:
-Whole Wheat Tortillas: You could also use white tortillas, but I personally prefer the nutrition benefits of whole wheat tortillas. We just roll them up, and make them into wraps.
-Crackers: You could also forget the bread, and dip crackers into the pineapple chicken salad mixture. It is delicious. This could also be a snack, appetizer, or game day finger food.
-Bread or Croissants: You could also make this into a sandwich, and would would taste amazing. It’s simple, delis, and kids love it.

Pineapple Chicken Salad Pitas Recipe
Ingredients
- 3 boneless skinless chicken breasts, (cooked and shredded)
- ½ cup shredded carrots
- ⅓ cup sliced almonds
- ⅓ cup light mayonnaise
- 4 green onions, (finely chopped)
- ¼ cup plain fat-free Greek yogurt
- 1 Tablespoon Worcestershire sauce
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 (8 ounce) can crushed pineapple, (drained)
- 6 (6 inch) whole wheat pitas, (cut in half)
- 6 Romaine Lettuce Leaves
Instructions
- In a large mixing bowl combine shredded chicken, carrots, almonds, mayonnaise, green onion, yogurt, Worcestershire sauce, garlic powder, salt, pepper and crushed pineapple.
- Divide chicken mixture evenly between pitas, top with lettuce and serve.
