My favorite thing about this easy chicken salad recipe is that you can serve it for lunch or dinner, on bread or over a bed of lettuce. Either way, this creamy chicken salad is my favorite way to use up leftover chicken.
Plus, just like with any other classic chicken salad sandwich recipe, you can add more ingredients or take away ones you don’t like to suit what your family likes.
Ingredient Notes:
- Chicken: when making this recipe the chicken should be cooked and shredded
- Celery: use fresh celery diced into bite-sized pieces
- Grapes: we like to use red grapes halved, but you can also use green grapes as well
- Cranberries: Grab a handful of the dried cranberries from OceanSpray and you are good to go
- Nuts: I love using chopped pecans for a little added crunch to this chicken mixture
- Yogurt: Use plain Greek yogurt, perfect to add even more protein to this recipe, a cup of mayonnaise could work too
- Juice: fresh lemon juice or lemon concentrate will work for this recipe
- Seasoning: Salt, black pepper, and garlic powder add the savory flavors to this dish
- Bread: pick your favorite bread or sandwich thins for a low carb and calorie diet
- Lettuce: I like pairing remain lettuce leaves or spinach
How to make Chicken Salad Sandwiches:
- In a large mixing bowl, combine chicken, celery, grapes, cranberries and pecans.
- Fold in greek yogurt and lemon juice.
- Add garlic powder and salt and pepper, to taste. Mix until well combined.
- Spread chicken salad onto bread.
- Top with salad and another slice of bread.
Storing and other tips for leftover chicken salad:
Fridge: Place the leftover chicken mixture with the creamy dressing into an airtight container and store it in the fridge for up to 4 days. Be sure to mix it up before using it the next day as the creamy salad dressing might separate a little bit.

If you don’t like everything we have in this recipe you can always leave it out and consider adding one of these simple ingredients:
- Red onion
- Green onion
- Fresh herbs (fresh dill or parsley would be great)
- Celery salt

The biggest thing is making sure the chicken is cooked before making this recipe. Then you can either use cooked boneless chicken breasts or chicken thighs as well.
