Let the slow cooker do all the work and you can enjoy the delicious flavors of this Slow Cooker Cilantro Lime Chicken Recipe!
The best part about this recipe is how versatile it is! You can use the chicken to make nachos, tacos, burritos, enchiladas or just eat it as a main dish! We like to pair it with INSTANT POT LEMON RICE PILAF and INSTANT POT REFRIED BEANS RECIPE (RESTAURANT STYLE)!

Ingredients needed to make Cilantro Lime Chicken in the Slow Cooker:
- 1½ pounds boneless, skinless chicken breasts
- Juice from 2 limes
- salt and pepper, to taste
- 1 teaspoon cumin
- 1 bunch fresh cilantro roughly chopped
- 12 ounces frozen corn
- 2 garlic cloves, minced
- ½ red onion diced
- 15 ounces canned black beans (drained and rinsed)
How to make Slow Cooker Cilantro Lime Chicken:
Spray slow cooker with non-stick cooking spray.
Place chicken breasts inside of the slow cooker.
Top chicken breasts with juice from limes, then sprinkle chicken breasts with salt and pepper and cumin. Add in cilantro, corn, garlic cloves, diced onion, and black beans.
Put the lid on the slow cooker and cook on low heat for 5-6 hours or high heat for 2-3 hours.
When cooking is complete, remove chicken from the slow cooker and shred with 2 forks. Add shredded chicken back to liquid in the slow cooker.
Serve shredded chicken on tortillas with your favorite toppings (sour cream, salsa, lettuce, guacamole, etc).
You can also use this chicken on top of a salad, in burritos, nachos, over rice . . . it’s incredibly versatile and works in so many different ways!
