Ingredients used to make Slow Cooker Pork Chops and Gravy:
For the slow cooker pork chops
- Bone-in pork chops (you can use boneless pork chops but bone-in has more flavor for gravy)
- Sea salt
- Ground black pepper
- Avocado oil (optional for searing, can also use olive oil as well)
- Onion
- Garlic
- Dried oregano
- Butter, melted
- Chicken stock (you can also use chicken broth in a pinch)
For the gravy
- Salted butter
- All-purpose flour (or corn starch can work too!)
- Milk
- Cooking juices from slow cooker pork chops
- Sea salt
- Ground black pepper
How to make Slow Cooker Pork Chops and Gravy:
For the pork chops
- Season the thick cut pork chops on both sides with sea salt and ground black pepper.
- OPTIONAL SEAR: For the best results, heat 2 tablespoons of avocado oil in a heavy-bottomed skillet over medium-high heat. Sear the pork chops for 2 minutes on either side.
- Place the seasoned pork chops in the bowl of a slow cooker.
- Add the onion, garlic, dried oregano, butter, and chicken stock. Mix to combine.
- Cook on high for 4 hours until they are fork tender. If you can, open the slow cooker every hour and spoon juices over the pork chops.
For the gravy
- Heat a large skillet to medium heat.
- Add the butter to the skillet and melt.
- Add the flour and whisk. Cook for a little bit, about 1 minute (or until golden brown), whisking continually.
- Add the milk gradually to the flour mixture, whisking the gravy mixture continuously until it is homogenous.
- ½ cup at a time, add the cooking juice to the skillet, whisking continuously.
- Season with sea salt and ground black pepper.
- Continue to cook for 5-7 minutes or until thickened and golden brown; whisking continuously all the while.
- Pour the flavorful gravy over the slow cooker pork chops to serve.

If you have leftovers from this slow-cooker pork chops recipe all you have to do is store the remaining pork and gravy in a separate airtight container and keep it in the fridge for up to 4 days.

Ingredients
Pork Chops
- 4 bone-in pork chops
- 1 teaspoon sea salt
- ½ teaspoon ground black pepper
- 2 Tablespoons avocado oil, (optional for searing)
- 1 medium onion
- 2 garlic cloves
- 1 Tablespoon dried oregano
- 2 Tablespoons butter, melted
- 1 cup chicken stock
Gravy
- 3 Tablespoons salted butter
- 1½ Tablespoons all-purpose flour
- 1 cup milk
- 2 cups cooking juices from slow cooker pork chops
- a pinch of sea salt
- a pinch of ground black pepper

Pork Chops
- Season the pork chops on both sides with sea salt and ground black pepper.

- ½ cup at a time, add the cooking juice to the skillet, whisking continuously.
- Season with sea salt and ground black pepper
- Continue to cook for 5-7 minutes or until thickened and golden brown; whisking continuously all the while.
- Pour the gravy over the slow cooker pork chops to serve.
Notes
- Searing the pork chops is totally optional, but we love the extra flavor it gives. If you have time for this step definitely give it a try!
