Breakfast food is my love language! I’ll take it anytime of day or night. We’ve been loving having breakfast for dinner lately but I wanted something sweeter than our usual eggs and bacon, while still keeping it healthy.
My husband is allergic to potatoes so we’ve gotten used to using yams or sweet potatoes in all of our recipes here at home. I decided to try adding some sweet potatoes into a breakfast bowl and it turned out amazing!
Health Benefits of Sweet Potatoes
Like all vegetables, sweet potatoes have some amazing health benefits! Here are just a few:
- High in fiber
- High in vitamin C and potassium
- Contains vitamins B5, B3, and B6
- Anti-Inflammatory
- Full of antioxidants
- Promote gut health
How to Caramelize Sweet Potatoes for Breakfast Bowls
These sweet potatoes are best when roasted or carmelized in your oven before adding them to your bowl. Here’s how we suggest baking them:
- Preheat oven to 425 degrees.
- Spray with nonstick cooking spray or line a 9×13 pan with foil.
- Peel and chop sweet potatoes into bite sized pieces.
- Lay potatoes on prepared pan and drizzle 2 Tablespoons of coconut oil over pieces.
- Toss until all potatoes are coated in coconut oil.
- Sprinkle with 1 teaspoon of salt.
- Bake for 25-30 minutes, tossing every 10 minutes, until potatoes begin to golden.
If you’re short on time, frozen sweet potatoes work too!
Toppings for Sweet Potato Breakfast Bowls
One topping that puts this breakfast bowl over the top is almond butter! It’s sweet and creamy, but a lot lower in calories than peanut butter. If you haven’t given almond butter a try we recommend starting with Justin’s Almond Butter! It’s delicious!
We’ve added our favorite toppings to the ingredient list below, but there are a lot of delicious toppings that would go great in your breakfast bowls. Here are a few more ideas:
- Peanut butter
- Sliced Almonds
- Strawberries
- Candied almonds
- Raspberries
- Coconut flakes
- Brown sugar
- Maple syrup
We like to make savory sweet potato bowls too! Here’s what I’d mix in with my potatoes if I were making a savory version:
- Fried eggs
- Avocado
- Salsa
- Sour cream
- Cilantro
- Black beans
- Cheese

Ingredients
- 2 sweet potatoes, diced
- 2 Tablespoons almond butter
- 2 Tablespoons coconut flakes
- 1 Tablespoon chia seeds
- 1 Tablespoon chopped pecans
- ½ cup blueberries
- 1 Tablespoon Honey
Instructions
- Preheat oven to 425 degrees.
- Spray with nonstick cooking spray or line a 9x13 pan with foil.
- Peel and chop sweet potatoes into bite sized pieces.
- Lay potatoes on prepared pan and drizzle 2 Tablespoons of coconut oil over pieces.
- Toss until all potatoes are coated in coconut oil.
- Sprinkle with 1 teaspoon of salt.
- Bake for 25-30 minutes, tossing every 10 minutes, until potatoes begin to golden.
- Transfer potatoes to breakfast two bowls and top with almond butter, coconut flakes, chia seeds, chopped pecans and blueberries. Drizzle with honey to taste.
