I originally saw this recipe over at Women Who Do It All, and it was posted there by our cute blogging friend Jocelyn, who is the mastermind behind the amazing recipes over at BruCrew Life.
You need to head over to her blog right now and see all the mouth-watering recipes she has. Anyway, when I saw this recipe I knew it was perfect for our “Beach Challenge” over at Wayward Girl’s Crafts.
The coconut adds just the right touch and gives it a “tropical” taste. We loved them.
They were so easy to make and came out perfectly. We have made them a few times now, and every time, I fall more and more in love with them, and how easy they are to make.
If you need a quick and delicious dessert, to feed a crowd, I highly recommend making these Tropical Chocolate Coconut Blondies.
what could i replace rum extract with?
For this recipe, the rum is just for extra flavoring, to give it that tropical taste, and a little kick of flavor. You could easily leave it out, and just have a more chocolate chip cookie taste.
You could also replace it with a different extract, and it would still taste absolutely delicious. Here are a few extracts we recommend replacing it with:
- coconut extract
- vanilla extract ( or imitation vanilla would also work)
- almond extract
The extract will just give it that extra boost of flavor, but again, it isn’t really necessary, just delicious.

Tropical Chocolate Coconut Blondies Recipe
Ingredients
- 2 cups brown sugar
- 2 eggs
- 1 stick of butter, softened
- 2 Tablespoons milk
- 2 cups flour
- 1 teaspoon salt
- 2 teaspoons baking powder
- 2 teaspoons rum extract
- ¾ cup shredded coconut
- 2 cups chocolate chips
- 5 bags coconut m&m's, 1.5 ounce bags
Instructions
- Preheat oven to 350 degrees.
- Beat the butter and brown sugar until very creamy.
- Add the eggs, extract, salt, and baking powder and beat again. Slowly beat in the flour until just combined.
- Stir the coconut, m&m's, and chocolate chips in by hand.
- Spread in a greased 9x13 pan and bake for 22-27 minutes (22 minutes if you like them gooey and a tiny bit undercooked . . . 27 minutes if you like them a little harder and fully cooked).
- Let them cool completely before cutting and devouring. (I actually think these these taste better the next day!!).
