Sauté onion in oil until soft. Add shredded chicken and BBQ sauce to pan and combine.
Remove from heat. Stir in cilantro and mozzarella cheese.
Spread chicken mixture evenly between 10 tortillas.
Roll up and place seam side down on a greased cookie sheet. Spray the tops of taquitos with nonstick cooking spray.
Cook for 15 minutes, or until golden brown.
Notes
This recipe works as a freezer meal. I will make these 1-2 weeks in advanced. Complete all the steps listed. Once they have cooled, wrapped them in foil and place in an airtight container or Ziploc bag. When you are ready to make them for dinner, place them in the oven at 350℉ for about 20 to 25 minutes.If you are in a hurry, you can microwave them, but we prefer to reheat in the oven. The oven gives them more crunch, and they will be less soggy from moisture in the microwave.
