I’m all about making life easier, so that means the less dishes I have to do the better. I love that this Sheet Pan and Green Bean recipe is a main dish and side dish all in one.
In a large mixing bowl, combine ground beef, eggs, onion, ketchup, salt and pepper, oats, bread crumbs, and half the can of soup.
Spray a baking sheet with nonstick cooking spray.
Form meatloaf mixture into 12 patties and place on baking sheet.
In a small mixing bowl, whisk together remaining soup, Worcestershire sauce and brown sugar.
Spoon some of the soup mixture on top of each meatloaf patty.
Toss green beans in olive oil until evenly coated and spread out on baking sheet between meatloaf.
Bake for 25-30 minutes, or until meatloaf is cooked through and green beans are soft.
Notes
When mixing, I mixed mine with a large spoon, but found it easier to use my hands. You could also use a Kitchen Aid, but I’m all about one less bowl or item to clean up, so I used my hands.
Be sure to wash your hands thoroughly both before and after combining the meat with the ingredients.
If you want to swap out green beans, we have also made this with broccoli, cauliflower, carrots (again they need to be sliced thin because they are a little more dense), zucchini, and sweet potatoes.
