Between two sheets of parchment paper, pound chicken using a meat tenderizer or kitchen hammer into 1/2" breasts.
In a bowl, combine ranch mix and pancake mix.
Dip each chicken breast into the dry mix and cover well on both sides.
Heat skillet over medium heat and melt butter.
Once butter is melted, place chicken in skillet and cover.
Cook for 4 minutes, flip your chicken, and cook for an additional 4 minutes on the other side.
Notes
Serve over rice of quinoa.
If you don’t like ranch, we’ve also made this chicken using lemon pepper and finishing off the cooking process with some fresh lemon slices, it was AMAZING.
