In a slow cooker that has been sprayed with non-stick cooking spray (or lined with a crock pot liner), place chicken and cover with the entire 12-oz jar of chipotle sauce.
Cook on high for 3-4 hours, or low for 6-7 hours, until chicken is completely cooked all the way through.
Remove chicken from slow cooker, shred, and return to slow cooker and mix with chipotle sauce until all the chicken is covered.
Serve chicken on tortillas with your favorite taco toppings.
Notes
We like to use Herdez Chipotle Sauce
You can double the amount of chicken (and not add more sauce) to feed more people.
To turn this into a freezer meal:Add chicken and sauce to a gallon-sized freezer bag. Squeeze out as much air as possible and seal bag closed. Place freezer bag into freezer and it will last 60-90 days. When ready to use, dump ingredients from bag into slow cooker. Place the lid on top and cook for 7-8 hours on low (4-5 hours on high). Remove the chicken from the crock pot and shred, then follow the instructions as written.
